Cantaloupe Muffins

Ingredients:

  • 1 c. All purpose flour
  • 1/3 c. sugar
  • 2 tsp. baking powder
  • 1 egg
  • 1 c. chopped cantaloupe
  • 1 tsp. vanilla extract
  • 1 c. Water
  • 1/3 c. vegetable oil or butter

Directions:

Preheat oven at 350 oF and grease muffin mold bake pan set aside.

  • Mix dried ingredients (flour, sugar, baking powder).
  • Add egg and vanilla mix well with spectula.
  • Gently add water and vegetable oil while mixing.
  • Scoop into muffin mold bake pan and bake at 350 oF for 24 minutes.

Baking Time: 24 mins. Let cool for 5 to 10 mins before removing muffins from bake pan.

Enjoy breadfast with cottage cheese and rasberries!!!
